Course books aren't 100% reliable when teaching students. They are very useful and have a lot of advantages when it comes to staying on track in a course but when it comes to teaching students you cannot solely rely on just using the book. You have to teach using other materials as well and engaging o different levels with the students. Each student has a different learning level and the textbook has only one level, that is why it is the teachers job to change the lessons for each student, but still use the course book as base.
